As a child and teenager, I didn’t eat the healthiest foods. On lazy days, go-to fast food included Subway, McDonald’s and Chinese takeout. After I got my driver’s license, Sonny’s BBQ (no leftovers), Japanese Steakhouse Hibachi (the WHOLE plate), and Dunkin’ Donuts were my go-to’s (two chocolate glazed donuts and a milk every morning before class).
In college, I steadily made a transition to healthier eating--less processed and fast food takeout. I quickly noticed I wasn’t feeling as crappy after eating. Then, I transitioned to veganism and there was no way I could have NOT noticed a difference.
I wasn’t sick to my stomach after EVERY meal. Rather than a decline in energy levels, I was rejuvenated. I felt fresh--is the best way I can think to describe it. I wasn’t lagging and dragging myself when I worked out or played volleyball.
Normally for breakfast, I eat a protein smoothie bowl. I never thought I’d see the day where I strayed away from my go-to breakfast, but the day has come. And, thank GOD it did because this recipe is addicting and so easy to make.

In college, before I went vegan, I decided to make my own breakfast sandwich. I would eat it every day, especially after going out on the weekends and coming home later. Now, after 3 years of my transition to veganism, I suddenly remembered how much I loved this breakfast sandwich and decided to make it recreate it vegan.
This recipe is high in protein and filling! A great way to start the day. I normally pair my breakfast sandwich with a large peach since they are in season or a side of fruit!
Vegan Breakfast Sandwich
Ingredients:
2 pieces of Lightlife Bacon Strips
3 tbsp Just Egg
1 Dave’s Killer Bread English Muffin
1 slice of Chao Creamy Cheese
1 Gardein Breakfast Sausage Patty
Directions:
Heat up two small saucepans.
In the first saucepan, measure out Justegg and pour into the saucepan. Make sure to constantly check on and rotate the egg to prevent burning.
In the second saucepan, cook breakfast patty and bacon. Make sure to rotate patty and bacon to cook both sides.
While both are cooking, toast English muffin.
When English muffin is toasted, place it on a plate and top with breakfast sausage, egg, quartered cheese, and halved bacon (to fit on the English muffin).
